Our wholesome Nutritious meals specially curated by Pujya Maa Dr. Hansaji Yogendra, Celebrity Chefs Ranveer Brar & Rujuta Diwekar to ensure healthy food is served in each bowl of ours.

Annam Brahma is the brainchild of The Yoga Institute Mumbai. It is a tribute to Dr. Jayadeva Yogendra who foresaw transforming the lifestyle of the poor with clean and healthy Satvik food. The idea was to empower them but not make them lazy or codependent on us.

Annam Brahma's mission is to eradicate malnutrition and change the dynamics of society. 

Annam Brahma is the brainchild of The Yoga Institute Mumbai. It is a tribute to Dr Saheb who foresaw transforming the lifestyle of the poor with clean and healthy Satvik food. The idea was to empower them but not make them lazy or codependent on us. Presently, Annam Brahma is serving food at the Yoga Institute in the mornings (7:00 am to 8:15 am) and in the evenings (7:00 pm to 8:00 pm). Likewise, we are providing food at the local Municipal hospitals namely The Baba hospital, and V N Desai hospital and as a future project to a mini hospital for TB patients. We thank our sponsors (who prefer to be anonymous) for giving us the Tata Ac truck to carry out the Annam Brahma on wheels plan. 

Team Annam Brahma treats the kitchen and the act as serving similar to that of their own home. Currently, they are utilizing the same kitchen that is used for the yoga students, staff, directors and owners. However, we ensure the food for Annam Brahma is according to our planned chart and follows the required protocol and standard of cooking and serving to people. The team is instructed to serve food with a lot of care and love towards those who eat them. We believe everything is connected and it is not just food that we serve them, but also try and educate the people in respecting the environment.

TYI director Hansa Ma articulates it is important to educate people, rather than enslave their minds and make them lazy. Food and mindful habits go hand in hand and to live a healthy lifestyle one must follow it consistently and prioritize over everything else.

Treasuring these enlightened thoughts, the Annam Brahma kitchen team and its volunteers strictly follow the zero-waste policy and spend time cultivating the importance of environmental hazards and its consequence.

Various Indian Spices

Our centralized kitchens have large kitchen units that can cook up to 10,000 meals a day. These kitchens serve the Yoga institute staff, teachers, students and the directors and residents who reside here. The kitchen Maharaj or the head cook is responsible to follow high standards of safety and sanitation. Each food element like cleaning, washing, storing, and cooking is done with a lot of patience and focuses with no lapse in the Fssai rule. The kitchen holds a license to serve the food and stringently follows the kitchen process and operations module. with no gap in food standards.

Cooking units in the centralized kitchen begin in the early morning. the kitchen runs by the organization's scheduled chart and agreed with the menu. The centralized kitchens are equipped with cauldrons, trolleys, rice, dal tanks, cutting boards, knives and other similar equipment that are sanitized before usage. Each rice cauldron has a capacity of at least 100 liters, and each dal cauldron can cook 100 liters. All the vessels are of stainless steel 304 food-grade material. Additionally, we dish wash area with a clean dish rack, landing table, vapour hood etc. The kitchen is well furnished to help the cook to make a well-cooked and with storage containers 1” x 6” S.S G. N Pans with lid insulated Bain Marie. We have 100 liters of 2 tilting boiling pans one used as a rice boiler with wastage proof or contamination issues. It is a 12 S W G SS (304) double jacketed vessel with a steam trap. Additionally, we have an exhaust hood to ensure the kitchen is ventilated. The kitchen is also with 2 burners Indian gas range 44"x 24"x 32 + 06".

Quality Assurance during procurement of raw materials

Annam Brahma’s process to procure kitchen raw material supplies are enormously meticulous and gives at most importance to the quality of products. This is to ensure those who consume the food will receive the required nutritious value of them. A thorough quality inspection is done to ensure all food safety standards are met.

Storage, Handling, and Preservation of raw materials

Fresh vegetables are procured daily. After procurement, the sorting of vegetables is done to retain the best quality. All the vegetables are cleaned with potable water and sanitized before the cutting process. By doing so, the kitchens can properly identify, store and appropriately retrieve the raw materials. Personal hygiene and Food Safety training are provided regularly to the kitchen staff to ensure hygiene standards are met. We do not use cold storage as we prepare and offer freshly made food daily.

Cooking process

Our kitchens have cooks who have been cooking Satvik food. Some supervisors who ensure kitchen standards and procurement is carried out seamlessly. Cooking is done with precise cooking time and temperature to keep up with the Satvik essence and to keep the nutrition content levels. To ensure food quality is maintained, a quality check is done by the head chef in the kitchen.

The cooked food is packed in steam vessels. We use specially designed and customized transport vehicles to deliver food which is packed in stainless steel 304-grade vessels.

Delivery Truck

GPS to track the delivery vehicles for safety and on-time delivery is gradually being adopted and implemented in the kitchens. The interiors are refurbished to suit our needs. It is strong and durable with stainless steel inbuilt utensils. It is also very convenient and easy to clean and sustainable option to store and serve food. Using stainless steel for your interior design helped in reducing the regular repair and maintenance costs.

Environmental care

Volunteers and delivery teams are instructed on a behavioural standard to follow. In case of a gap in understanding, review and feedback are initiated or trigger appropriate corrective or improvement actions to improve the quality and delivery of food are taken. In future, we plan to take feedback from the beneficiaries for consistent maintenance of the quality of the meal.

In the beginning, we started with aluminium foil cups and plastic spoons and switched to biodegradable bowls and cups made of environmentally friendly sugarcane waste.

 

As we aim to maintain and better our services by sustaining the quality of the meals we provide, there is a need for continual improvement. We are constantly learning from our daily experiences and aim to get better our delivering and serving food to people. It has been continuous learning and we are happy to be a part of this process.

Annam Brahma's mission is to eradicate malnutrition and change the dynamics of society. Since inception, a wholesome breakfast is chalked out, which fills their stomachs but also gives the required energy to pull through the day. Meals at TYI are served twice a day morning and evening. It is observed as of now, that 600 people eat breakfast and about 600 people eat dinner at the TYI. 

How nutrition impacts on the body?

Malnutrition doesn’t always mean a weak frail body; malnutrition can also mean having excess nutrients in the body that causes obesity. Satvik food can help in combating this issue and also lead a healthy lifestyle.

Having nutritional food helps in grow stronger and fuel right amount of energy for the body to function.  It helps in your body getting protein, vitamins, minerals, and fats. 

 

Bhabha hospital and V N Desai hospital, 6 days a week Monday to Saturday, meals are given to approximately 600 people and about 500 at the V N Desai hospital.

Our breakfast plan for the week:

The menu served at the TYI and V N Desai is similar. Bhabha hospital khichdi is served as brunch around 10:30 am. In both hospitals, no food is served on Sundays. We started on a Sunday, and our first meal offered was Sheera (Semolina pudding), like the saying in Hindi "Mau meetha Karo", we started our journey by serving people this sweet dish. Our most liked breakfast meal satiates the soul with its aroma and scrumptious taste, yet immensely healthy.

Rava / Sooji / Semolina - Rava is rich in protein which improves bone and muscle health. Carbohydrates and fiber content in Rava act as a fuel to your body and increases energy levels. B vitamin content prevents anaemia and can help with brain health. Rava is rich in minerals like magnesium and iron which help reduce blood pressure and supports the growth of red blood cells. Potassium is good for kidney health. It is ideal to be included in a weight loss diet as it has low fat, low sodium and zero levels of cholesterol. Nuts in general are a great source of various nutrients and can help reduce the risk of heart disease. Raisins are loaded with antioxidants that help fight cancer cells. Poha is an excellent breakfast food as it's easy to digest and has a high fiber content. A 100 g serving of poha contains 3.3 g fiber. Poha contains 6.1mg of iron and is a good source of probiotics.
